Santa Fe Chicken #2

  • 2 boneless Chicken breasts

  • ¼ ts coarsely ground black pepper

  • 1-ounce sl Swiss cheese

  • 1 ts seasoned salt 4 hamburger buns, split and to

  • 1-ounce sl Canadian bacon, warmed

  • 1 California peach, chopped 1 tomato, seeded and chopped ¼ ts chili powder ¼ c chopped green onions 1½ tb chopped fresh mint

  • Combine seasoned salt and pepper. Loosen one edge of chicken skin and = rub=20 seasoning mixture under skin. Cook chicken, skin-side down, on covered =

  • grill over medium indirect heat about 8 minutes per side or until = chicken=20 is tender and no longer pink. Remove skin. Serve chicken on hamburger = buns=20 topped with cheese, ham, and salsa or barbecue sauce. Garnish with=20 lettuce. Salsa: In small bowl, combine all ingredients. Refrigerate at=20 least 2 hours. Makes about 1=BD cups.
