Chocolate Cheesecake Cupcakes
Chocolate cream cheese cupcakes, rich and gooey and delicious. These are wonderful to serve at a party or shower.
ingredients
Filling- 1 8-ounce package cream cheese, softened
- 1/3 cup sugar
- 1 egg, beaten
- 1/8 teaspoon salt
- 1 6-ounce package chocolate chips
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1/2 teaspoon salt
- 1/4 cup cocoa
- 1 teaspoon baking soda
- 1 cup water
- 1 tablespoon vinegar
- 1/3 cup cooking oil
- 1 teaspoon vanilla

Combine first four filling ingredients; beat well. Stir in chocolate chips and set mixture aside.

Sift together flour, sugar, salt, cocoa, and baking soda. Add remaining ingredients and beat well.

Fill small cupcake liners with the chocolate mixture. Then drop 1/2 teaspoon of the cheese mixture on top of each. Bake at 350° for about 20 minutes.

Use small muffin tins and tea-size liners.
notes
For the chocolate base, you can substitute a chocolate cake mix, prepared according to package directions.
