Bare-Cupboard Black Beans and Rice
Necessity is the mother of invention.
ingredients
- 1 c. uncooked rice
- 2 cups of cooked black beans in their broth
- Dash of cumin
- 3 T. olive oil
- 1 medium onion, finely chopped
- 2-3 cloves of garlic, finely chopped
- 1/2 tin of diced mild peppers
- 1 heaping teaspoon of tomato paste
- Salt and pepper

1. In one pot, start cooking the rice. In another, warm the black beans on low heat with the bay leaf.

2. Saute the onion, garlic, and peppers in the olive oil for about a minute. Add the tomato paste and stir until it blends with the other ingredients. Cook for another minute or so.

3. When the beans have heated through, put the onion mix into the pot with the beans. dd a dash of cumin, salt and pepper to taste, and anything else that comes to mind. Cook till heated through and serve over rice.
