Creamy spinach with some heat!

ingredients

  • 2 pkgs. (10oz.) frozen chopped spinach; thawed and well drained,reserve 1/2 cup spinach liquid
  • 4T. butter
  • 2-3T. flour
  • 2T. chopped onion
  • 1/2 cup Pet milk(evaporated milk)
  • 1/2 cup of the previously reserved spinach liquid
  • 1tsp. garlic powder
  • 1tsp. celery salt
  • 6 oz. pkg. pepper jack cheese,grated
  • 1/2 cup breadcrumbs

directions

Melt butter. Sauté onions until wilted. Sprinkle flour over onions and blend. Cook 1-2 minutes; slowly add milk and spinach liquid. Add cheese and seasonings. Cook until melted. Add spinach in small amounts stirring to incorporate after each addition. Place into greased casserole. Top with breadcrumbs and bake at 350° 30-40 minutes or until bubbly.
