ingredients

  • Dough
  • 5 cups of flour
  • 5 cups of semolina flour
  • 5 Eggs
  • Pinch of salt
  • Add water to reach desired texture
  • Filling
  • 2 Lbs. of ricotta cheese
  • 1 Lb. ground beef (raw)
  • 4 Eggs
  • 2 T. parsley
  • 1 cup grated Romano cheese
  • Salt to taste
  • Pepper to taste
  • Garlic powder to taste
  • Makes about 170 ravioli depending on size.
  • Boil 8 - 10 minutes.
  • Serve with your gravy.

    Make dough into long log and flatten, add row of filling, fold, cut with knife in desired size and fork edges.
