Helene's Recipe for Chicken Soup
ingredients
- 4 Stalks celery with the greens on cut into bite size pieces
- 4 Carrots cut into bite size pieces
- 1 Onion chopped
- 1 Clove garlic
- 4 cups water
- 1 Can chicken broth
- 3 chicken breasts with bone in
- Kosher salt and pepper

Clean chicken breasts and place in large pot (do not remove skin because it adds the flavor but remove excess fat).

Throw in vegetables, onion and garlic to the pot.

Add salt and pepper.

Add water and chicken soup. Make sure everything is covered in liquid. If it isn’t add more chicken broth.

Place pot on the stove and put on high. Cook until liquid starts to boil then reduce heat to low and allow to cook on the stove for one hour.

After an hour, remove chicken breasts and cut off the chicken. Put it back in the pot and allow to cook for another 10 minutes.

Serve over rice or noodles, or whatever you like.
