White Fish with Lemon & Caper Sauce
This recipe works well with Talapia, orange roughy, flounder, sole, catfish, any mild white fish. Fast & Easy to prepare, all you need is some angel hair pasta and a green veggie side for a restaurant quality meal.
ingredients
- 1 lb fish fillets, about 1-1/2" thick
- 1/4 cup all-purpose white flour
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tsp olive oil
- 1 clove garlic, minced
- 1/2 cup white wine or chicken broth
- juice of 1 lemon
- 1 Tbsp capers
- 2 tsp butter
- 1 Tbsp chopped fresh parsley
directions
Combine flour, salt and pepper in a shallow dish. Dredge fish lightly in the flour mixture. Heat oil in a large, non-stick skillet over medium-high heat. Cook the fish for 1 to 3 minutes per side or until the outside is golden brown and the interior is opaque. Transfer to a plate to keep warm. Add garlic to the skillet and cook, stirring, for several seconds. Add wine or chicken stock and bring to a boil, stirring. Add lemon juice, capers and butter, swirling the skillet until the butter has melted. Remove from heat. Add the fish back to the pan and spoon sauce over fish. Sprinkle with parsley and serve.
