Shrimp and Feta Scampi

Makes 4-6 servings

ingredients

  • 1 9-ounce package fresh linguine
  • 1 1/2 pounds peed and deveined medium shrimp
  • 1 10-ounce package frozen snow peas or sugar snap peas
  • 4 green onions, sliced
  • 1/2 cup reduced-fat olive oil vinaigrette
  • 1/4 teaspoon ground pepper
  • 1/4 cup crumbled reduced-fat feta cheese

    Bring 2 quarts water to a boil in a large saucepan. Add pasta and cook 2 minutes. Add shrimp and cook 2 minutes. Add snow peas and cook 1 minute or until shrimp are done; drain.

    Place pasta mixture in a large serving bowl. Add green onions, vinaigrette and pepper; toss gently to coat. Sprinkle with feta cheese.
