CARA'S POTATO SOUP

Makes 10-12 servings

ingredients

  • 1/2 cup onion -- diced
  • 1/2 cup celery -- diced
  • 4 cups potatoes -- cubed
  • 6 cups water
  • 1 package California blend vegetables -- frozen
  • 2 cans cream of chicken soup
  • 1 pound Velveeta cheese -- cubed

directions

  • 1

    Combine the first 4 ingredients and boil 15 to 20 minutes until potatoes are done.

    Add the frozen vegetables and boil 10 more minutes.

    Stir in: the 2 cans of cream of chicken soup and the 1 pound of Velveeta cheese.

    Keep on low so it will not scorch: do not boil at this point.

    Can add water if to thick.
