CARA'S POTATO SOUP
ingredients
- 1/2 cup onion -- diced
- 1/2 cup celery -- diced
- 4 cups potatoes -- cubed
- 6 cups water
- 1 package California blend vegetables -- frozen
- 2 cans cream of chicken soup
- 1 pound Velveeta cheese -- cubed

Combine the first 4 ingredients and boil 15 to 20 minutes until potatoes are done.

Add the frozen vegetables and boil 10 more minutes.

Stir in: the 2 cans of cream of chicken soup and the 1 pound of Velveeta cheese.

Keep on low so it will not scorch: do not boil at this point.

Can add water if to thick.
