Sweet Potato with Peaches

  • 6 medium sweet potato
  • 15 oz can of peach slices in natural juice
  • 2/3 cup packed light brown sugar
  • 2 Tbsp butter
  • 1/4 c. reserved juice for can of peaches

    Preheat oven 350

    Peel and slice potato 1/2" thick

  • 3

    Boil 10 minutes

  • 4

    Drain and cool

  • 5

    Grease 10 x 13

  • 6

    Layer sweet potatoes and peach slices

  • 7

    Boil brown sugar, butter, 1/4 cup reserved juice for 1 minute

  • 8

    Pour over potato mixture

  • 9

    Bake for 30-35 minutes

  • 10

    Stir it twice while in oven
