Sweet Potato with Peaches
ingredients
- 6 medium sweet potato
- 15 oz can of peach slices in natural juice
- 2/3 cup packed light brown sugar
- 2 Tbsp butter
- 1/4 c. reserved juice for can of peaches

Preheat oven 350

Peel and slice potato 1/2" thick

Boil 10 minutes

Drain and cool

Grease 10 x 13

Layer sweet potatoes and peach slices

Boil brown sugar, butter, 1/4 cup reserved juice for 1 minute

Pour over potato mixture

Bake for 30-35 minutes

Stir it twice while in oven
