Crab Bisque
Easy Crab Bisque
ingredients
- 2 Tbsps. Butter
- 4 Shallots Minced
- 2 Cups Chopped Mushrooms (6-8 med.)
- 2 (8oz.) bottles of Clam Juice
- 1 (6oz. or 8 oz.) Package of Imitation Crab Meat
- 1 Cup of Cream
- 1/2 Cup of Brandy or Cognac

In a saucepan, melt butter over med-high heat. Add shallots and saute 2 min. Add mushrooms and saute 3 min. Add crab and cook 1 min. Add clam juice and brandy. Bring to simmer. Transfer half of the mixture to blender. Process until pureed. Repeat. Return to pan. Stir in cream and heat through.

Add salt & pepper before serving.
notes
Can be served in bread bowls, topped with Parsley.
