Spiced Plum Jam

Citrus juice and cinnamon add to the lovely flavors in this recipe. Its ease of preparation makes it perfect for holiday gift giving with the personal touch.

ingredients

  • 1/2 c fresh orange juice
  • 1/4 c fresh lemon juice
  • 2 lbs plums (preferably purple-fleshed), halved, putted, cut into 1/2 inch thick slices
  • 1 cinnamon stick
  • 3 1/2 c sugar

directions

Combine fresh orange and lemon juices in heavy large saucepan and bring juices to boil. Add sliced plum and cinnamon stick. Cover mixture and bring to boil. Reduce heat and simmer covered until plums are very tender, stirring occasionally, about 15 minutes. Add 3 1/2 c sugar and stir until sugar is dissolved. Simmer uncovered until plum mixture reaches gelling stage, crushing fruit with back of spoon and stirring occasionally. (Follow test for doneness in lemon ginger marmalade recipe.) Discard cinnamon stick. Spoon plum preserves into jars, process in water bath and follow storage instructions as described in lemon ginger marmalade recipe.
