Moroccan Couscous with Chicken and Apricots
ingredients
- 1 lb chicken tenders
- 2 tbsp mango chutney
- 1 tsp Dijon mustard
- 1 (7-oz) box couscous with nuts, currants, and spices
- 6 dried apricots, cut into thin strips
- 2 tbsp chopped fresh cilantro

1. Combine the chicken, chutney, and mustard in a large bowl; toss well to coat. Spray a large nonstick ridged grill pan or skillet with nonstick spray and set over medium-high heat. Add the chicken mixture and cook, turning frequently, until the chicken is cooked through, 6-8 minutes.

2. Meanwhile, prepare the couscous according to package directions.

3. Fluff the couscous with a fork and transfer to a large platter. Top with the chicken mixture, apricots, and cilantro. Serve at once.
