Pumpkin Bars

Year-round Pumpkin Treat

ingredients

  • 4 eggs
  • 2 cups sugar (1 brown, 1 white)
  • 1 cup vegetable oil
  • 1 can Libby’s Pumpkin (15 oz)
  • 2 cups flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp nutmeg, cloves, ginger (each optional)
  • 1/2 tsp salt

Batter Prep

  • 1

    In large bowl mix:

    Eggs and sugar. Add oil and mix.

    Add pumpkin and mix slightly. Do not overmix.

  • 4

    Sift dry ingredients and mix all together.

  • 5

    Pour into greased/floured jelly roll pan.

  • 6

    Bake @350 degrees for 20-25 minutes or until knife or toothpick in center comes out clean.

    Cool before frosting.

Cream Cheese Frosting

  • 1

    6 oz cream cheese (softened)

  • 2

    1 cup butter or margerine

  • 3

    2 TBSP milk

  • 4

    2 tsp vanilla

  • 5

    3 1/2 cup powdered sugar

  • 6

    Beat together until thick & spreadable consistency. Add more sugar if needed.

    Spread over cooled bars. Refrigerate at least 1/2 hour before cutting into bars.

These freeze very well and thaw quickly. Very good when cold. Our family favorite.
