Mexican Tilapia

This flexible recipe can be made with low or fat free ingredients and olive oil can be used in place of butter. One of my daughter’s favorite recipes!

ingredients

  • 6 Tilapia Fillets
  • 1 cup flour for dredging
  • salt
  • pepper
  • 3 Tablespoons butter (or olive oil)
  • SAUCE:
  • 2-3 Tablespoons olive oil
  • 1/2 cup chopped red onion
  • 2 cloves garlic, minced
  • 1/4 teaspoon black pepper
  • 3 Tablespoons all purpose flour
  • 2 Tablespoons butter
  • 1 14-ounce can Fat Free Chicken Broth
  • 1 8-ounce carton of low fat dairy sour cream
  • 1/2 teaspoon salt
  • 3/4 cup salsa - mild (unless you like it hot!) Chopped jalapeno or chili peppers can be substituted
  • 1 1/2 cup shredded Mexican blend cheese
  • 12 ounces flaked crab meat (optional)
  • 2 cups crumbled tortilla chips

    In a medium bowl stir together chicken broth and sour cream until combined.

    Heat 2 tablespoons olive oil in a large saucepan and cook red onion, coriander (optional), salt and black pepper until onion is tender. Add Garlic and cook two more minutes. Lower heat and add 2 Tablespoons butter. Once butter melts, stir in flour until it is completely absorbed and has cooked for a minute. Slowly add sour cream and chicken broth mixture, 1/3 at a time, stirring between each addition until thickened. Once liquid is completely incorporated and mixture has thickened again, add salsa and stir gently. Add crab meat at this point if desired. Cook over medium heat until mixture is slightly thickened and bubbly. Remove from heat and 1 cup cheese. Stir until melted. Reheat sauce just before fish are ready.

    To prepare fish, salt and pepper both sides of fish and dredge lightly in flour.

    In separate large skillet, heat butter or olive oil until bubbling/hot. Add fillets to skillet (do not overlap) and cook for 5 minutes or until lightly browned. Flip fillets and cook on other side until lightly browned, another 4 minutes or so.

    Place fillets on plates and top with sauce. Sprinkle cheese on top and top cheese with crumbled tortilla chips.
