Rhubarb Pie
ingredients
- Crust:
- 2 cups sifted flour
- 1 teaspoon salt
- 3/4 cup Crisco shortening
- 5 tablespoons cold water
- Filling:
- 4 cups 1-inch sliced rhubarb
- 2 1/2 cups sugar
- 1/3 cup flour

Crust:

Sift flour and salt together, cut in shortening with pastry blender until pieces are the size of small peas. sprinkle one tablespoon of water at a time in mixture and gently toss with fork until all is moistened. Form into a ball. Divide dough into two balls for double crust pie. Roll dough into crust.

Combine above and let sit for 15 minutes before filling pie shell. Dot mixture with 2 tablespoons butter. Place top pie crust over mixture, flute edges, cut slits.

Bake at 400° for 50 minutes.
