Microwave Boiled CustardJanet Spaulding
My Grandmother used to make this on the stove for the holidays. It took her hours of constant stirring. This is easy and taste just as wonderful.
- 6 eggs (5 jumbo)
- 1 cup sugar
- 6 cups milk (1-1/2 quarts)
- 1/2 teaspoon vanilla
Beat eggs (in blender) add sugar and fill with as much milk as will easily fill the blender with the eggs and sugar. Pour in a deep casserole or microwavable dish. Pour in the rest of the milk and blend well.
Microwave in cycles as follows:
Cycle 1 - 5 minutes on high; blend well
Cycle 2 - 5 minutes on high; blend well
Cycle 3 - 5 minutes on high; blend well
Do this until the mixture becomes thick. Beat the entire mixture until smooth (this may need to be done back in the blender). Let stand and then beat again. Add 1/2 teaspoon vanilla, mix. Chill thoroughly.
