Italian Wedding Soup
Lynne made this for all of us Thanksgiving 2007 and it was great. It is good, perhaps even better as leftovers. Purchasing pre-made meatballs would make the preparation even quicker!
ingredients
- 1# ground turkey
- 2 eggs, beaten
- 1/4cup breadcrumbs
- 2 Tbsp Romano cheese, grated
- 1 tsp basil
- 1 tsp onion powder
- 12 cups low sodium chicken broth
- 4 cups kale, thinly sliced (de-rib, roll into big “cigars” and slice into ribbons)
- 2 cups orzo pasta, uncooked
- 2/3 cup carrot, finely chopped

Combine bread crumbs, meat, egg, cheese, basil, and onion powder; shape into 3/4" balls.

In stew pot, heat broth to boiling; add meatballs, kale, orzo, and carrot. Return to a boil, reduce heat to medium. Cook at slow boil for 10 minutes - stir frequently to prevent sticking.

Can be frozen or refrigerated.

Crusty bread, butter, and a salad complete this hearty, satisfying meal.
