Spanish Meatballs

EmilyEmily Chalfant

These are low-cal and really good served with some tomato sauce over polenta!

servings:Makes 4 servings
prep time:
10 min
total time:
30 min

  • 1 lb. ground turkey (breast or thighs, I’ve even used turkey)
  • 1/2 onion
  • 1 clove garlic
  • 1 slice bacon, cut into small cubes (again 10 minutes in the freezer makes it easier to slice)
  • Olive oil
  • Salt and pepper
  • 2 c. tomato sauce

Brown the bacon and drain over paper towels, cool. Saute the garlic and onion in the bacon fat for 5 minutes. Add the bacon, garlic, onion, salt and pepper to the ground turkey. Using your hands, mix thoroughly and form into ping-pong ball size balls.

Heat a small amount of olive oil over high heat, once hot add meatballs and brown. Once browned, turn heat to medium and add the tomato sauce. Simmer until the meatballs are cooked through and the sauce is warm. Serve over polenta or pasta!
