fluffy airy ham and egg dish

ingredients

  • 1/4c.butter,1/4c.minced onion,1/4c.flour,1c.milk,1/2c.very sharp cheddar cheese grated,1/2tsp.worcestershire,1/4tsp.salt,1/4tsp.dry mustard,5 eggs[separate yolks,and whites.]1tblsp.parsley chopped,1 1/2c.baked ham diced.

directions

heat oven to 350.in a pan,melt the butter,add onion til tender,wisk in flour til smooth,heat til bubbly.remove the pan from heat stir in milk slowly.return to heat,bring to a boil.keep wisking.add cheese,worcestershire,salt,mustard,cook,stirring constantly.in a lg bowl,beat egg yolks,gradually stir the cheese mix into the yolks,blend smooth.stir in parsley and ham.in a bowl beat the egg whites til stiff peaks.[not dry]lightly fold eggwhites into ham mix,pour mix into a 2-quart souffle dish.bake 45min.or when knife inserted very carefuly in center comes out clean.serve immediately.a bernaise sauce can be served on side .
