Chicken Chasseur
ingredients
- 6-8 boneless chicken breasts
- 1/2 cup flour
- 1/4 tsp thyme
- 1 tsp salt
- 1 pepper
- paprika
- 2 T each butter and oil
- 2 cloves garlic,chopped
- 3 green onions chopped
- 1 large can peeled and chopped tomatoes
- 1/4 cup lemon juice
- 6 oz fresh mushrooms, sliced
- 1 cup white table wine
- salt and pepper to taste
- 1/2 cup chicken broth
- 2 T. fresh parsely
- fresh broccoli

Cut chicken into serving pieces. Combine flour and seasonings in a bag. Add chicken, a few pieces at a time, and shake to coat each piece. Warm oil, butter and garlic in a large frying pan. Add chicken and brown on each side.

Add green onions, and tomatoes to chicken. Add remaining ingredients and cook, covered, on low heat for about 1 hour.

Serve with hot rice.
