Best Quiche Recipe
I have baked this quiche at many Herb Cooking classes, and at a cooking demonstration at SMU with my good friend and cooking companion, Lindle O’Neil. A very successful recipe!!
ingredients
- 3 slices bacon, cooked and crumbled
- 1 bunch green onions, sliced
- 1 tsp salt
- freshly ground pepper
- 1 T flour
- 3/4 cup heavy cream
- 1/4 cup milk
- 3 eggs, whisked
- 1 cup gruyere cheese, shredded
- 2 T fresh chives, snipped
- 1 pie shell, precooked and cooled

Cook bacon til browned, drain, remove all but 1 Tablespoon of bacon fat. Add onions, salt and pepper. Cook over medium heat until tender. Stir in flour. remove from heat.

Whisk eggs in a bowl with milk and cream, add bacon and onion mixture.

Pour filling into prebaked pie shell. Sprinkle cheese and chives over egg mixture.

Bake until lightly browned, and puffy about 30 minutes

Cool on rack 10 minutes, serve warm cut into wedges.
