Black Bean Salsa
Really good served with teriyaki or honey grilled salmon. MAKE THE DAY BEFORE!
ingredients
- 1 15 ounce can black beans, drained and rinsed
- 1 fresh tomato
- 1 small can of chopped tomato
- 1 small bunch green onions, chopped
- 1/3 cup fresh cilantro leaves, chopped
- 1/4 cup chopped red onion
- 1/2 can whole kernel corn
- 1 tsp. olive oil
- 2 tsp. minced garlic
- 1 TBL lemon juice
- Cumin if desired
- Black pepper to taste
- Chili pepper to taste
directions
In a large bowl, mix together all ingredients. chill in the refrigerator at least 8 hours, or overnight before serving.
