Margarita Granita
ingredients
- 1 1/2 cups water
- 1 1/2 cups sugar
- 3 cups fresh lime juice
- 1 cup tequila
- 1/2 cup orange liqueur

In a medium saucepan combine water and sugar and bring to a boil over high heat.

Reduce heat to medium-low, stir, and simmer until the sugar dissolves completely (about 5 minutes).

Remove the simple syrup from the heat and allow it to cool.

In a large bowl, combine the syrup with the lime juice, tequila, liqueur and whisk well.

Pour the mixture into a rectangular freezer-proof container and freeze just until ice crystals begin to uniformly form (about 2 hours).

Remove the slush from the freezer and break up with a fork. Return the dish to the freezer for another 30 minutes.

Repeat this scraping/freezing process another 3 times for a total of 4 hours.

Sugar glasses with coarse sugar and garish with a lime slice.
