This is a great quick dish and healthy too!

ingredients

  • 1 box Tri-colored Rotini pasta
  • 2 cloves garlic
  • 1 small onion
  • 5 oz fresh spinach leaves
  • 1 large tomato
  • 20 green olives
  • olive oil
  • salt/pepper to taste

directions

    Cook pasta according to directions & drain. Pour pasta in serving bowl. Do not rinse.

    While pasta is cooking, chop onion, garlic, dice tomatoes, half olives. In a large pan, saute onion with garlic in olive oil. When onion is translucent, reduce heat and add spinach. Stir until spinach is mostly wilted. Add tomato and olives. Mix together for 1 minute.

    Combine with paste. Add olive oil, salt & pepper to taste. Toss together and serve.

This also goes good with grilled chicken.
