ingredients

  • 1 (18 oz.) pkg. refrigerated sugar cookie dough
  • 1 (8 oz.) container vanilla, strawberry, or banana low-fat yogurt
  • 1 (8 oz.) can crushed pineapple in juice, well drained
  • 1/4 c. sweetened flaked coconut (optional)
  • 2 kiwi, peeled and slices
  • 1/2 c. seedless red grapes, cut in half
  • 1 (11 oz.) can mandarin orange segments, well drained
  • 2 Tbsp. whole almonds, chopped

    Preheat oven to 350°. Form dough into one large ball and roll into a 12-inch circle, about 1/4-inch thick. Place on baking stone or prepared cookie sheet. Bake for 16-18 minutes or until light golden brown. Cool 10 minutes. Carefully loosen cookie from baking stone; cool completely.

    Combine yogurt, pineapple and coconut; spread mixture evenly over top of cookie. Arrange kiwi, grapes, and oranges in an overlapping circular pattern over yogurt mixture. Chop almonds and sprinkle over fruit.
