Make the night before and pop it in the oven in the morning. Great for ski weekends.

ingredients

  • 6 slices white bread crusts removed
  • 2 T butter(softened)
  • 1 lb sausage
  • 4 c Colby/Monterrey jack cheese
  • 6 eggs
  • 2 cans chopped green chilies
  • 1 t salt
  • 1 t dry mustard
  • 2 cups half and half
  • salsa
  • sour cream
  • green onions
  • black olives

directions

    Lightly butter both sides of bread slices an place in 9 x 13 inch baking dish. Brown sausage and drain, pat with paper towels.

    Sprinkle sausage over bread slices. In medium bowl beat eggs slightly. Add salt, mustard, half & half, cheese, chilies and 1/2 c salsa. Mix thoroughly. Pour over casserole. cover with foil and refrigerator overnight.

    To bake, preheat oven to 350 and bake 45 minutes or until bubbly and lightly browned. Allow to stand 15 minutes to set. Cut into squares and serve with salsa, sour cream, green onions, olives, etc.
