1 medium onion, chopped
1 can Ro-Tel tomatoes
2 c. cooked, cubed chicken
1 can cream of mushroom soup
1 can cream of chicken soup
Tortillas, cut into bite sized pieces
2 c. shredded cheddar or fiesta blend cheese
Preheat oven to 350°
In a large saucepan, cook onion with EVOO until tender. Add soups, Ro-Tel and chicken. Stir until well blended.
In a 13x9 in. baking dish, alternate layers - tortillas, soup mixture, chesse, repeating 3 layers.
Bake 40 minutes or until hot and bubbly
