ingredients

  • 36 wonton skins
  • 2/3 c thick-and-chunky salsa
  • 1/4 c chopped fresh cilantro
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1 15 oz can whole kernel corn, drained
  • 1 15 oz can black beans, rinsed and drained
  • 1/4 c plus 2 Tbs fat-free sour cream
  • Cilantro sprigs to garnish

    Heat oven to 350°. Gently fit 1 wonton skin into each of 36 small muffin cups. Bake 8-10 min or until light golden brown. Remove from pan; cool on wire racks.

    Mix remaining ingredients, except sour cream and cilantro sprigs. Just before serving, spoon bean mixture into wonton cups. Top each with 1/2 tsp sour cream. Garnish with cilantro sprig.

This recipe is great when you need appetizers ahead of time. Just bake the wonton cups ahead, and mix up the filling. Fill and garnish the wonton cups right before serving. 50 cal 0g fat 1g fiber 11 carbs
