Pasole
ingredients
- 1 Rotisserie chicken, de-boned
- 4 (14 oz) cans chicken broth
- 2 (16 oz) cans white hominy
- 1 chopped onion
- 3 Tbsp olive oil
- 2 garlic cloves; chopped
- 1 cup cilantro; chopped
- 1/2 tsp oregano
- 2 Tbsp California red chili powder
- 1 large avocado; diced
- Salt & pepper to taste

Simmer chicken in broth approx 15 minutes

Saute onion in oil until soft. Add garlic, saute 2 mins. Combine all ingredients (except avocado & cilantro) and simmer approx 35 minutes.

Serve in bowls and top with cilantro & avocado.
