ingredients

  • 1 Rotisserie chicken, de-boned
  • 4 (14 oz) cans chicken broth
  • 2 (16 oz) cans white hominy
  • 1 chopped onion
  • 3 Tbsp olive oil
  • 2 garlic cloves; chopped
  • 1 cup cilantro; chopped
  • 1/2 tsp oregano
  • 2 Tbsp California red chili powder
  • 1 large avocado; diced
  • Salt & pepper to taste

    Simmer chicken in broth approx 15 minutes

  • 2

    Saute onion in oil until soft. Add garlic, saute 2 mins. Combine all ingredients (except avocado & cilantro) and simmer approx 35 minutes.

    Serve in bowls and top with cilantro & avocado.
