Tortilla Soup

ingredients

  • 1 whole chicken
  • 1 onion; chopped
  • 4 scallions; chopped
  • 1 can diced green chiles
  • 1 bunch cilantro; chopped
  • 1 bunch parsley; chopped
  • handful baby carrots; chopped
  • 4 stalks celery; chopped
  • 1 large tomato; diced
  • 1 dzn corn tortillas
  • 1 lb jack cheese; shredded
  • 1 diced avocado
  • garlic, salt & pepper to taste

directions

  • 1

    Boil chix until tender; remove from stock.

  • 2

    Cool chicken, strain stock and return broth to pot.

  • 3

    De-bone chicken & add to stock.

  • 4

    Add all veggies (except avocado)

  • 5

    Simmer approx 2 hours.

  • 6

    Serve with warmed, shredded tortillas, avocados & shredded cheese.
