Beef Stroganoff
Same as Tenderloin Tips (but with Sour Cream added) Leave out Sour cream for a darker taste.
ingredients
- 1 1/2 lbs round steak or cheap roast
- 4 TBL Olive Oil
- 1 large chopped onion
- 2 cups mushrooms, sliced
- 3 TBL flour
- 2 TBL chopped fresh dill or 1 tsp. dill weed
- 1 large bay leaf
- 2 cups water
- 2 tsp powdered instant beef broth
- 1/2 tsp salt and pepper
- 1 8 ounce carton low fat sour cream

Cut meat into 1/4 strips, 2 inches long. Heat oil in large skillet. Add meat and saute quickly until brown, but rare inside. Remove from skillet and add onions and mushrooms. Saute until golden (6-8 minutes). Gradually stir in water and beef broth. (or 2 cans prepared beef broth) Add bay leaf, meat and simmer until tender.

Before serving, add flour mixed with a little water, stirring constantly until sauce thickens, aprox. 3 minutes. Add salt and pepper.

Fish out bay leaf. Stir in sour cream gradually, heat slowly but DO NOT BOIL. (It curdles and looks really bad - yes, I’ve curdled it)

Add dill, serve with wide noodles or mashed potatoes.

Best simmered slowly until tender. If for dinner, start right after lunch.
