Winter comfort food!

ingredients

  • 8 cups water
  • 1 package (1 pound) dried pea soup mix, rinsed and sorted
  • 3 - 4 medium carrots, diced
  • 1 medium onion, chopped
  • 1 medium stalk celery, chopped
  • 1 - 2 medium potatoes, diced
  • 1 - 2 cups diced Canadian-style bacon, ham, or ham on bone
  • 1/2 tsp. salt (ham is salty already!)
  • 1 tsp. dried thyme leaves
  • 1/4 tsp. dried rosemary leaves, crumbled (or use a bay leaf)
  • 1/2 tsp. pepper

    In 3 1/2- to 4-quart slow cooker, mix all ingredients. Cover and cook on low heat setting 8 to 10 hours or until peas and vegetables are tender.

    VERY IMPORTANT: Place 2 cups of the soup in blender or food processor. Cover and blend on medium speed until smooth; pour into bowl. Repeat with 2 more cups soup. Mix the blended and the chunky together for the perfect blend.
