Soup - Split Pea with Ham
Winter comfort food!
ingredients
- 8 cups water
- 1 package (1 pound) dried pea soup mix, rinsed and sorted
- 3 - 4 medium carrots, diced
- 1 medium onion, chopped
- 1 medium stalk celery, chopped
- 1 - 2 medium potatoes, diced
- 1 - 2 cups diced Canadian-style bacon, ham, or ham on bone
- 1/2 tsp. salt (ham is salty already!)
- 1 tsp. dried thyme leaves
- 1/4 tsp. dried rosemary leaves, crumbled (or use a bay leaf)

In 3 1/2- to 4-quart slow cooker, mix all ingredients. Cover and cook on low heat setting 8 to 10 hours or until peas and vegetables are tender.

VERY IMPORTANT: Place 2 cups of the soup in blender or food processor. Cover and blend on medium speed until smooth; pour into bowl. Repeat with 2 more cups soup. Mix the blended and the chunky together for the perfect blend.
