Swiss Steak
ingredients
- 1 pound round or sirloin steak (thin)
- 1 C onion sliced in thin rings
- 1/2 C carrots, sliced
- 1/2 C celery, sliced
- 1 16 oz can whole tomatoes, undrained, cut-up
- 4 TBSP flour
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp thyme
- 2 TBSP oil

Cut steak into serving sized pieces. Mix flour, salt, pepper. Coat steak pieces with flour mixture; pound with mallet to tenderize. Heat oil in large skillet. Brown meat. Drain excess fat. Slowly add carrots, celery, onion, and tomatoes. Sprinkle thyme over mixture and add salt if needed. Cover, simmer 1 to 1 1/4 hrs or until tender.

Serve with steamed rice or noodles.
