Mango and Avocado Salad
Cool refreshing salad. Great accompaniment to a spicy main dish.
ingredients
- 2 large ripe mangos, peeled, pitted, and cut into 1-inch chunks
- 2 ripe avocados (medium size), halved, pitted, and cut into chunks
- 1/4 cup juice from 2 limes
- 1/4 cup minced red onion
- 1/4 cup (about 1/2 bunch) fresh minced cilantro leaves
- Salt to taste

Mix together above ingredients.

Refrigerate covered for one or more hours to blend flavors. (up to 24 hours)
notes
Unripe mango can be used, but should be cut into matchsticks instead of large chunks. 1 small jalapeƱo, stemmed, seeded and minced may also be added
