Sweet Potato Soffle in Orange Baskets

ingredients
- 6 sweet potatoes, medium or small
- 1/2 tsp salt
- 1 lump butter
- 1 egg
- raisins
- grated rind of 2 oranges
- orange baskets
- marshmallows
directions
Boil potatoes, peel and mash with masher or ricer; season with salt and butter; add beaten egg, raisins to taste, and the grated orange rind. Make little baskets of scooped out orange shells and fill with potato mixture. Top with marshmallow and bake until light brown.
