Pumpkin Soup

Creamy and tasty without the fat and extra calories.

ingredients

  • 3 cups pumpkin, diced
  • 1 medium potato, diced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 Tbs olive oil
  • 2 tsp coriander seeds
  • 2 tsp ground roasted cumin
  • 4 cups vegetable/chicken stock
  • salt and pepper to taste

directions

Saute pumpkin,potato,onion, garlic,coriander and cumin with oil in a saucepan on high heat until lightly browned, being careful not to burn garlic. Add stock and simmer for 10 mins, or until potato is tender. Cool slightly. Place in blender and puree till smooth. Put back in pot and ajust seasonings. Can add more stock or water if soup is too thick. Garnish with coriander leaves and enjoy!
