Rice Salad
I first tasted this salad at Matt and Ila McAuliffe’s house. It was an instant hit! A very refreshing salad, great as accompaniment for a summer barbecue.
ingredients
- 2 10 ounce cans Black Beans
- 2 cups Cooked Rice
- 1 10-oz package Corn
- 1 small red Onion, chopped
- 1/2 cup Cilantro, chopped
- 2 Red Bell Peppers, chopped
- 2 Tablespoons Basalmic Vinegar
- 1/4 cup fresh Lime Juice
- 1/2 cup Olive Oil
- 1/4 teaspoon Salt
- 1/4 teaspoon Black Pepper

Mix all ingredients together. Let sit for at least 1 hour to blend flavors.

To make a full meal, add chopped grilled chicken to the salad.
notes
I use less olive oil -- about 1/4 cup.
