Aloo Matar: Potato-Peas Curry

Ingredients- 2 tblsp Oil
- 1 Bay leaf
- 3 Red chillies
- 1 tsp Cumin seeds
- 2 Cardamoms
- 1/2" Cinnamon stick
- 1 Onion, chopped
- 2 Garlic cloves, chopped
- 1 tsp Cumin powder
- 1/2 tsp Turmeric powder
- 1 tomato, chopped
- 3cups Green peas
- 2 Potatoes, peeled, chopped and boiled
- Salt to taste
- 1/2 tsp Garam masala

Heat oil in a pan. Add the bay leaf, whole red chillies,cardamom,cinnamon and cumin seeds. When they splutter and begin to leave a nice aroma, add the onion and garlic and saute. Add the tomatoes, turmeric and cumin powders and cook over low heat.

When the tomatoes are mushy, add the potatoes and stir for a couple of minutes. Add the peas and salt and cook till they are done.

Add a glass of water to make the gravy and mash a few pieces of potatoes to thicken it. Increase the heat and simmer for two minutes. Add the garam masala powder and after simmering for another minute, remove from heat.
