Waikiki Meatballs
Morsels of meat in a tantalizing sweet-sour sauce. Great crowd pleaser!
ingredients
- 1 1/2 lbs. Ground Lean Beef
- (or ground turkey meat)
- 2/3 Cup Cracker Crumbs
- (Approx. 10-12 Saltine Crackers)
- 1/3 Cup Onion, minced
- 1 Egg
- 1 1/2 teas. Salt
- 1/4 teas. Ginger
- 1/4 Cup Milk
- 1 Tbls. Vegetable Oil
- 1 Tbls. Cornstarch
- 1/2 Cup Brown Sugar, packed
- 1 Can Pineapple Tidbits
- (13-1/2 oz. drained)
- Reserve syrup from Pineapples
- 1/3 Cup Vinegar
- 1 Tbls. Lite Soy Sauce
- 1/2 Green Bell Pepper
- (Cut into 1/2 inch squares)
- (reserve syrup)

Mix meat, crumbs, onion, egg, salt, ginger and milk. Shape mixture by rounded tablespoonfuls into balls.

Heat oil in large skillet; brown meat balls. Remove meatballs; keep warm. Pour fat from skillet.

Mix cornstarch and brown sugar. Stir in reserved pineapply syrup, vinegar and soy sauce unti smooth. Pour into skillet; cook over medium heat, stirring constantly until mixture thickens and boils. Boil 1 minute. Add meatballs, pineapple tidbits and green pepper; heat through.

Serve as appetizers with cocktails or with rice as a main course.
