I make these every year at Christmas. These are very good! The recipe came out of A Taste of the Holidays cookbook that I got years ago.

ingredients

  • 1 1/2 cups granulated sugar
  • 1 1/2 cups light brown sugar, firmly packed
  • 1/4 cup light corn syrup
  • 1/8 tsp salt
  • 1 cup evaporated milk
  • 4 Tbs butter
  • 1 tsp vanilla extract
  • 1 1/2 cups broken pecans

directions

Combine the sugars, corn syrup, salt, milk and butter in a large heavy saucepan. Cook over medium heat, stirring constantly until sugar is dissolved. Stir frequently until mixture reaches 236° on a candy thermometer or until it forms a soft ball when a small amount is dropped in cold water. Remove from heat and cool 2 or 3 minutes. Add vanilla and pecans. Beat with a wooden spoon until mixture begins to thicken. Quickly drop by spoonfuls onto greased foil. Allow to cool completely. Store in a sealed container.
