Granny's Favorite Salad Dressing
ingredients
- 1/2 teaspoon Coleman’s Dry mustard
- Coarsely ground black pepper, to taste (40 shakes from large restaurant grind container)
- Garlic salt (to taste, 3-4 shakes)
- Pinch of salt (to taste, generous pinch)
- 1/4 cup grated Parmesan cheese
- 3/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar (usually Regina)

1. Mix all ingredients together well with a wire whisk in the bottom of a large salad bowl.

2. Add sliced cucumber and scallions and allow to marinate while the rest of dinner is cooking.

3. Right before serving, toss with salad green and whatever else is desired (like tomato, etc.)

1) I had to chase my mother (Granny) around the kitchen estimating the ingredients as she threw together this salad dressing. She’s one of those cooks who goes by feel and rarely measures anything.
