Stir Fry Tofu

ingredients

  • 1 lbs extra firm tofu -- cut into 1" cubes
  • 1/2 C sake
  • 2 tbsp sesame oil
  • 1/4 C soy sauce
  • 2 cloves garlic -- minced
  • 1 tsp ginger
  • 1 onion -- sliced thin
  • 1 red bell pepper -- diced
  • 2 C broccoli florets -- OR
  • 2 C bok choy
  • 1 C snow peas
  • 1/2 C roasted cashews

directions

In wok, bring soy sauce, garlic ginger and sake to a boil. Add tofu cubes, cover and simmer for 5-10 minutes. Remove tofu and remaining broth from wok. Heat oil in wok and stir fry vegetables over medium heat for 3-5 minutes. Add remaining broth, tofu and cashews. Heat and serve.
