Sausage, white bean and Pasta Chili
ingredients
- 1 lbs mild Italian sausage(casing removed)
- 29 oz canned diced tomatoes(2 14 1/2 Oz cans
- 14 oz chicken broth
- 4 oz chopped green chiles,rinsed & drained
- 2 tsp paprika
- 1/4 tsp cayenne pepper or to taste
- 2 tbsp ground cumin
- 15 oz (1 can) navy beans rinsed & drained
- 2/3 C tiny pasta shells,cook-makes about 1 1/4 c
directions
Spray a Dutch oven or deep pot with no-stick spray or coat with 1 tbsp veg. oil. Over medium heat, cook the sausage, breaking it up into small chunks as you stir, until lightly browned. Pour off the excess fat from the pot(I used low-fat Italian chicken sausage & there was no fat) Add the tomatoes and their liquid, the chicken broth, green chiles, paprika, cayenne and cumin. Bring to a boil, reduce the heat and simmer uncovered for 25 minutes. Removed fro the heat, stir in the beans and pasta, and mix gently but thoroughtly. Reheat and serve. Serve 4 to 6.

NOTES : It was very spicy but we loved it, especially Dad.
