ingredients

  • 1/2 C flour
  • salt & pepper to taste
  • 1 tsp dried oregano
  • 2 lbs boneless skinless chicken breast (HEB Milanese style as is) -- sliced or pound to make thin
  • 3 tbsp olive oil
  • 2 C canned fat free chicken breoth
  • 1 tsp minced garlic
  • 1/4 C lemon juice
  • 2 tbsp parsley
  • mushrooms

directions

Combine flour, S & P, oregano - Coat chicken & set aside

In skillet, Pam & oil until hot, cook chicken on each side until golden brown, Med high. Remove chicken I added mushrooms at this point and sauted them before I added the next 3 items.

Add broth, garlic & lemon juice to pan

Return chicken, bring to boil, reduce heat, cover & simmer for 10-15 minutes. Sprinkle with parsley

CAn add capers (I did, rinse to remove salt.
