Chicken Piccata from Fran
ingredients
- 1/2 C flour
- salt & pepper to taste
- 1 tsp dried oregano
- 2 lbs boneless skinless chicken breast (HEB Milanese style as is) -- sliced or pound to make thin
- 3 tbsp olive oil
- 2 C canned fat free chicken breoth
- 1 tsp minced garlic
- 1/4 C lemon juice
- 2 tbsp parsley
- mushrooms
directions
Combine flour, S & P, oregano - Coat chicken & set aside
In skillet, Pam & oil until hot, cook chicken on each side until golden brown, Med high. Remove chicken I added mushrooms at this point and sauted them before I added the next 3 items.
Add broth, garlic & lemon juice to pan
Return chicken, bring to boil, reduce heat, cover & simmer for 10-15 minutes. Sprinkle with parsley
CAn add capers (I did, rinse to remove salt.
