Great recipe from Paula Dean,very quick and easy.
4 tblsp butter (½ stick)
4 bonless chicken breast halves (4oz)
1 cup sliced fresh mushrooms
2 tblsp minced shallots
¼ teasp salt
¼ teasp pepper
4 oz grated mozzarella cheese
Melt butter in a large skillet over medium heat. Add mushrooms and shallots and sprinkle with salt and pepper. Cook 10 minutes. Add Chicken and cook 10 Minutes on each side, or until browned and tender. Transfer chicken to plates and sprinkle with grated cheese. Top with mushroom & shallo mixture. Let stand 5 minutes until cheese melts.
