Taco Salad
ingredients
- 1 pound lean ground beef
- 1 medium red onion minced, divided
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1 teaspoon sea salt
- 2 - 3 large tomatoes, diced (seeded if desired)
- 1 large head iceberg lettuce, washed, dried and cut into bite size pieces
- 1 can pinto or black beans, drained
- 2 cups cheddar cheese, shredded
- tortilla chips broken into bite size pieces
- 1 cup green taco sauce
- 1/2 cup mayonnaise
- 2 tablespoons lemon or lime juice

Saute ground beef, breaking into small pieces with a fork, and add half the minced onion, garlic, chili powder, cumin, salt and pepper.

Cook until meat is done and onion is tender.

Mix taco sauce, mayonnaise and citrus juice to make salad dressing. Set aside.

Mix all ingredients in large bowl and pour dressing over the top.

Toss well
notes
Ground turkey or chicken can be substituted for the beef.
