Chamarro Rejeno

This is Auntie Tita’s recipe. It is as close to Grandma’s recipe as I can find. All measurements are approximate.

  • 1 pound lean ground beef

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 6 or 7 good sized potatoes, peeled, cubed and deep fried until brown

  • 3 to 4 cups white bread cut into cubes

  • ⅔ cup diced sweet pickles

  • 2 tablespoons pickle juice

  • 2 jars chopped pimento, drained

  • 2 small cans sliced or wedged black olives, drained

  • Saute beef with onions and garlic, salt and pepper. Drain.

  • Put all ingredients in a large bowl and mix well.

  • Use to stuff a turkey or place in shallow baking pan and bake for 45 minutes at 325°
