Chamarro Rejeno
This is Auntie Tita’s recipe. It is as close to Grandma’s recipe as I can find. All measurements are approximate.
ingredients
- 1 pound lean ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 or 7 good sized potatoes, peeled, cubed and deep fried until brown
- 3 to 4 cups white bread cut into cubes
- 2/3 cup diced sweet pickles
- 2 tablespoons pickle juice
- 2 jars chopped pimento, drained
- 2 small cans sliced or wedged black olives, drained

Saute beef with onions and garlic, salt and pepper. Drain.

Put all ingredients in a large bowl and mix well.

Use to stuff a turkey or place in shallow baking pan and bake for 45 minutes at 325°
