Vegetable Hummus Wraps
These delicious wraps are a great vegetarian choice that will leave even the meatlovers in your life will be begging for more.
ingredients
- 2 Tbs olive oil
- 1 pkg. portobello mushroom slices
- 1 yellow bell pepper, sliced into strips
- 1 red bell pepper, sliced into strips
- 1 orange bell pepper, sliced into strips
- 1 purple onion, sliced into strips
- 2 daikon radishes, sliced diagonally
- 3 zucchini, sliced into fourths vertically and then halved horizontally
- 1/2 c fresh basil leaves, whole
- Sabra roasted garlic hummus
directions

Heat olive oil in a non-stick frying pan over medium-high heat

Add peppers and onion. Cook until soft and slightly browned.

Remove peppers and onion and place onto serving platter.

Place mushrooms and zucchini in frying pan and cook until mushrooms are soft and zucchini is browned.

Wrap 3-4 tortillas at a time in damp paper towels and heat in microwave for 25 seconds.

Spread hummus on tortillas and fill with veggies

For those of you who don't care for garlic, any hummus of your choice can be substituted.
