Cucumber Salad

  • 3 English cucumbers, thinly sliced

  • 1 red onion, thinly sliced

  • 1 cup apple cider or red wine vinegar

  • ⅓ cup low sodium soy sauce

  • ¼ cup oil

  • 2 tablespoons sugar

  • ½ teaspoon garlic powder

  • 1 teaspoon red pepper flakes

  • Place cucumbers and onion in a large bowl; set aside.

  • Place remaining ingredients in a small bowl and whisk until well blended.

  • Pour over cucumbers and mix well, Chill

  • Cover and refrigerate.
